I highly recommend Castle of the Winds. Very fun, and not nearly as complicated as many of the rogue-likes out there.
I also suggest Angband, Mordor, Moria and Linley's Dungeon Crawl

I'd agree, it is gameplay not graphics that make a Roguelike what it is, but The Binding of Isaac isn't one.
To try and avoid a long and heated debate about this, I'd like to reference the opening paragraph of the Wikipedia article:

It doesn't really fit, although it comes close.

That said, The Binding of Isaac is an awesome Action game that utilises many of the techniques Roguelikes use to become so engaging.

Also, Spelunky is also not a Roguelike.

Caves of Qud is a futuristic post-apoc roguelike in open beta, and a very, very good one at that. Too many praises to sing, so just go play it.

The only roguelike I liked :

You basicaly have to survive by fishing, hunting, cooking etc.
It's made by 2 guys who live in finland in a house in the middle of the forest or something like that, and they are not developping really fast, it's too bad :(
The project started in 1990
